While Microgreens is only recently gaining in popularity, scientists have been busy studying the benefits of eating this tiny but mighty green. We recently read a great article in The Journal of Agricultural and Food Chemistry highlighting the health benefits of microgreens scientists were able to observe. Microgreens are rich in bioactive compounds. They help the body regulate it's immune system and inflammation
Microgreens are high in flavonoids which can contribute to having a healthy gut microbiome.
