Butternut Squash Soup with Kale Microgreens

With the snow falling and the wind blustering on a winter day, nothing beats holding a hot bowl of soup. We love making vegetable soups because it's an easy and enjoyable way to get in a ton of nutrients and vitamins.



One of our favourite soups to make is butternut squash. Our go to recipe is dairy free (just don't add the goat cheese), full of vegetables and fruit (yes! fruit). There is some chopping and prep involved but the best part of this recipe is it takes only 8 minutes in the Instant Pot! We add some goat cheese and kale microgreens on top at the end for garnish.
